Notes
Century egg tofu is a refreshing, appetizing cold home-style dish: the century eggs are bouncy and silky, the silken tofu melts in your mouth, and the salty, savory, slightly sour flavor goes great with rice. Tofu is rich in quality plant protein and calcium, while century eggs provide iron, vitamin A and other nutrients; together they're easy to digest. There's almost no skill barrier, so beginners can make it easily, and it takes only about 5 minutes from prep to table.
