- Sugar
- Salt
- Baking powder
- Egg
- Whipping cream
- Cream cheese (optional)
Steps
- Beat the egg, weigh out 30 g into a clean container, then add all the cream and the cream cheese and mix well. If the cheese is too hard, warm it in a water bath to about 40 degrees before mixing.

- Cut the butter into small pieces, add to the dry mixture and rub it in with your fingers until it resembles coarse cornmeal
- Pour the egg-cream mixture from step one into the butter-flour mixture, stir until nearly combined, then fold and press into an even dough
- Place the dough on the board, roll it out 1.5 cm thick and cut into suitable shapes with a knife or cutter
- Brush the remaining 20 g of beaten egg over the tops of the scones
- Preheat the oven to 180 degrees and bake for 27 minutes

Notes
British scones are a classic afternoon tea treat: crisp outside, soft inside, with a rich egg-and-cream aroma, even better with jam or clotted cream. Made mainly from flour, butter, eggs and cream, they are rich in carbohydrates and protein for a quick energy boost. The process is fairly simple; with basic dough-handling skills, beginners can manage it. It takes about an hour from prep to out of the oven.
