Notes
This is a traditional Cantonese clay pot dish: lamb and bean curd sticks blended with Chu Hou sauce and fermented bean curd for a rich, savory flavor that is unctuous but not greasy, warming body and soul, perfect for cold winters. Lamb is rich in protein and iron and is warming and nourishing, while bean curd sticks provide quality plant protein for a balanced meal. There are many prep and stewing steps, but the heat control is not complicated, and beginners can succeed by following step by step. Expect about two and a half hours from prep to serving.
