Ingredients
- You can make at most three servings at a time. For more than 3 people, make it in several batches.
- Eggs
- Water
Steps
- Crack the eggs into a microwave-safe ceramic bowl and beat them with chopsticks.
- Add the water and salt and stir well.
- Add the dried baby shrimp to the bowl and stir so they don't clump together.
- Finely chop the scallion into pieces about 0.6±3 mm across, add to the bowl and stir well.
- Put the bowl in the microwave and cover it with cling film or a microwave-safe ceramic plate (note: do not seal it; leave room for expansion). Heat for 2 minutes (500 W).
- Carefully remove the cling film or cover, then heat for another 2 minutes.
- If your microwave has no turntable, slowly rotate the bowl 180 degrees horizontally so the contents heat evenly.
- Add the sesame oil.
- Carefully take the bowl out of the microwave (it is really hot).
- If you choose to add soy sauce, use just enough that it flows over the surface and coats the custard in the thinnest possible layer.
- Happily enjoy your egg custard.

Notes
Microwave egg custard is a quick and simple home-style steamed egg dish, silky and tender, perfect as a late-night snack or a quick bite. Eggs are rich in high-quality protein and many vitamins, and the dried shrimp add calcium. It is very beginner-friendly since there is no heat control to master, and it takes only about 10 minutes from beating the eggs to serving.
