Ingredients

  • Pork belly strip (recommended size 20cm\*6cm\*5cm)
  • Lettuce
  • Soy sauce, salt, MSG, cooking wine, ginger and garlic, oil, doubanjiang (fermented bean paste)

Steps

  1. Slice the pork belly strip along its long side into slices 1mm-1.5mm thick and set aside
  2. Put the sliced pork in a bowl and add, in order, 8g soy sauce, 1g salt, 1g MSG, 10g cooking wine, two slices of ginger and two smashed garlic cloves; marinate for 10 minutes
  3. Pull the lettuce leaves off by hand, wash and set aside
  4. Heat the pan and add 5ml cooking oil. When the oil just starts to smoke, add the pork belly. Fry one side until golden brown, then flip and do the same on the other side.
  5. Remove the pork belly from the pan and plate it.
  6. Spread doubanjiang on a lettuce leaf, wrap the pork belly in it and eat

Notes

Pan-fried pork belly is a quick home-style meat dish: the slices are fried until fragrant and slightly crisp, rich but not greasy, and wrapped in crisp lettuce with savory doubanjiang they taste deeply savory and refreshing. Pork is rich in quality protein and fat for quick energy, while lettuce adds fiber and vitamins for better balance. It suits people with some cooking experience, but beginners can manage too if they watch the heat and guard against splattering oil. It is ready in about half an hour from prep to plate.
