Ingredients

  • Pork tenderloin (pre-cut, pre-weighed pork strips from the supermarket work fine)
  • Smoked dried tofu (xianggan)
  • Salt
  • Light soy sauce
  • Starch
  • Garlic
  • Green pepper
  • Chicken bouillon powder

Steps

Preparation

  1. Mix the `pork strips` (if you can't buy them, cut your own) with light soy sauce (3 ml) and cornstarch until evenly coated, then set aside.
  2. Wash the `green peppers`, then cut them with the `roll-cut technique` and set aside.
  3. Slice the `garlic` crosswise and cut the `smoked tofu` into strips.
  4. Mix the `starch` with water (10 ml) and stir until smooth.

Cooking

  1. Put 15 ml of oil in a clean wok; without waiting for it to heat up, add the pork strips and gently separate them. As soon as the pork is cooked, remove it immediately, leaving the oil in the wok.
  2. Add the garlic slices and smoked tofu to the wok, add 2 ml of light soy sauce and stir-fry evenly.
  3. After 2-3 minutes, depending on the heat, add the green pepper and stir-fry together.
  4. After 1 minute, add the pork strips back in and mix.
  5. Pour in the starch slurry to thicken, add 3 g salt and 2 g chicken bouillon powder, stir-fry for 2-3 minutes and serve.
  6. Done.
  7. Note: different woks and stoves affect the stir-frying time. If you're not sure whether it's cooked, taste a piece.

Calculation:
Before cooking, decide how many servings you plan to make. One serving feeds exactly 1 person.

Total:

  • Smoked tofu = servings * 75g
  • Green peppers = servings * 5
  • Pork = servings * 100g
  • Salt = servings * 3g
  • Light soy sauce = servings * 5ml
  • Starch = servings * 5g
  • Garlic = servings * 5g (about 3 cloves)
  • Chicken bouillon powder = 2g

Use the above to calculate the amount of each ingredient you need.

For the peppers, green peppers work, and screw peppers (luosi jiao) are the best choice. If you like it spicy, finely chop some bird's eye chilies and add them together with the green pepper!
