Notes
Laba porridge is a traditional sweet porridge for the Laba festival: thick and soft, blending the aromas of many grains, beans and dried fruits. It's rich in carbohydrates, minerals and vitamins, and lotus seeds are said to calm the mind — good for people under work stress. Although there are many ingredients, it's simple to make; just simmer patiently, so it's beginner-friendly. Excluding soaking, the cooking takes about 3 hours.

Calculation:
For one person (three small bowls), one serving is:
- Drinking water 1 L
- Rice 50 g
- Glutinous rice 50 g
- Job's tears 50 g
- Black rice 50 g
- Millet 50 g
- Lotus seeds 25 g
- Mung beans 25 g
- Red beans 25 g
- Peanuts 25 g
- Soybeans 25 g
- Peas 25 g
- Red dates 25 g
- Longan 25 g
- Chestnuts 25 g
- Shelled walnuts 25 g
- Raisins 25 g
- Red kidney beans 25 g
- Rock sugar 10~25 g
Adjust the amounts to taste; keep the total grains under 150 g and each type of bean under 50 g.
- Stir as you add ingredients to the pot so they're evenly distributed, and watch the water level; if it drops below the rice and ingredients, add water immediately.
- Keep the heat moderate, not too high, and stir regularly. With a regular pot, add the ingredients after the water boils, stir until it boils again, then lower the heat to avoid burning the bottom. If possible, use a pressure cooker or porridge pot.
