Ingredients

  • Optional tools
  • Electric pressure cooker (greatly simplifies cooking and saves time)
  • Clay pot (better than a wok for making soup)
  • Required ingredients
  • Pork ribs
  • Bitter melon
  • Dried small shrimp

Steps

  1. Wash the ribs and cut them into pieces of about 4cm ±2cm * 3 ± 2cm (if you don't have a tool for chopping ribs, ask the butcher)
  2. Put 700ml cold water and the ribs in a wok, bring to a boil, turn off the heat and remove the ribs
  3. Cut the bitter melon in half lengthwise, scrape out all the seeds and pith, cut into strips of 0.5 ± 0.3 cm and rinse
  4. Cooking in a stockpot
  5. Put 1100ml water and the ribs in the stockpot over high heat
  6. Once the water boils, add the bitter melon and dried shrimp, reduce to low heat and simmer for 120~240 minutes (after 120 minutes you can take out a piece of meat to taste; when it comes off the bone fairly easily, turn off the heat)
  7. Add salt and white pepper before serving; recommended amounts are 0.3 to 0.6g salt and 0.1 to 0.5g white pepper per 250ml
  8. Cooking in an electric pressure cooker
  9. Add 1000ml water, the ribs, dried shrimp and bitter melon
  10. Select the soup function and cook (usually 45 minutes under pressure)
  11. Serve, adding salt and pepper as with the stockpot

Notes

Pork rib and bitter melon soup is a clear, savory Cantonese home-style soup with a sweet aftertaste: tender ribs, and bitter melon that cools and cuts through richness. It's rich in protein and vitamins, and the dried shrimp adds calcium. Blanching to remove odors and carefully removing the bitter melon pith is a bit challenging for beginners, but an electric pressure cooker simplifies it greatly. Traditional slow simmering takes 2 to 4 hours, so start 4 hours ahead; a pressure cooker needs only about 1 hour.
