- Chinese yam (iron-stick yam recommended)
- Carrot
- Corn (sweet or waxy corn recommended)
- Fresh ginger
- Scallions
- Cooking wine
- Salt
- Clay pot or deep stockpot
Steps
Prepare the ingredients
- Wash and peel the carrot and roll-cut it into pieces of about 3cm.
- Wash the corn and chop it into rounds about 4cm long.
- Peel the yam (wear gloves to prevent skin irritation from the sap) and cut it into sections about 4cm long; set aside.
Blanch the ribs
- Fill a pot with plenty of cold water and add the washed ribs.
- Add about 10g ginger slices, a scallion knot and 15ml cooking wine.
- Bring to a boil over high heat, then wait 3 minutes, skimming off the foam with a spoon.
- Remove the ribs, rinse off any impurities in warm water at about 40℃, drain and set aside.
Sear the ribs
- Heat the pot, add 10ml cooking oil and wait 10 seconds for it to heat up.
- Add the remaining 10g or so of ginger slices and fry until fragrant.
- Add all the prepared ribs and stir-fry over medium heat for about 1 minute until lightly browned.
Simmer
- Add 1500ml - 2000ml drinking water to the pot all at once.
- Add all the prepared carrot, corn and yam.
- Bring to a boil over high heat, then reduce to low, cover and simmer for 40 minutes.
Season and serve
- Add 6g - 8g salt and stir well with a spoon.
- Keep on low heat and simmer for 2 more minutes so the salt is absorbed.
- Turn off the heat, sprinkle with chopped scallions to taste and serve.

Calculation:
Before cooking, decide how many servings to make. One serving is exactly enough for 2 people.
Per serving:
- Pork ribs 500g
- Chinese yam 1 (about 300g)
- Carrot 1 (about 150g)
- Corn 1 cob (about 250g)
- Fresh ginger (about 20g, sliced)
- Scallions (about 15g, knotted or chopped)
- Cooking wine 15ml
- Cooking oil 10ml
- Drinking water 1500ml - 2000ml
- Salt 6g - 8g
- Preventing browning: if the peeled yam doesn't go into the pot right away, soak it in water so it doesn't oxidize and darken.
- Texture control: for very soft yam, add it with the ribs; if you want the yam to stay in pieces, add it after the ribs have simmered for 20 minutes.
- Topping up water: if the water drops below the ingredients while simmering, always add hot water; cold water makes the meat fibers contract suddenly and turn tough.
